Best Brownies Ever

Recipe: Sweet Lydia's Best Brownies Ever
Total time: 10 minutes (plus brownie baking time)

Unusual ingredients: peanut butter, caramel or Nutella, Sweet Lydia's Marshmallows

Brownies. Peanut butter. (Or Nutella. Or caramel.) One toasted homemade gooey marshmallow to top it all off. Can life get better? I submit that it cannot!

This is another of the amazing recipes from Sweet Lydia’s Marshmallow Guide. Lydia is a friend of mine, and I was lucky enough to do the pictures and taste test all of the recipes for it! All of the recipes in the cookbooklet use a bag of her homemade marshmallows. This one is easily one of my favorites, because holy moly, when you cut into the brownie you’ll be greeted with your choice of peanut butter, Nutella, or caramel!

Self-frosting peanut butter and chocolate vegan cupcakes

Recipe: Wing It Vegan's Self-Frosting Peanut Butter Cupcakes
Total time: 45 minutes
Ease: easy
Unusual ingredients: soymilk, apple cider vinegar, flax seeds, peanut butter, applesauce

Me: “Honey, I think I’m going to bake something… what would you like?”
Brad: “Um, something with chocolate? Oh wait, I think we’re out of eggs!”
Me: “I have just the thing!”

I’d been saving this recipe for a rainy day when I was sort of out of typical baking ingredients… like eggs. Or milk. Now, I also didn’t have flax seeds, but I did have both the vinegar and the unsweetened applesauce, so I went for it!

These were supposed to be “self-frosting” cupcakes. And they sort of were. But mine certainly didn’t come out as pretty as the original post. That being said, they were absolutely delicious. (more…)

Chocolate-Dipped Peanut Butter Meringue Cookies (with sprinkles!)

Recipe: How Sweet It Is' Chocolate Dipped Peanut Butter Meringue Cookies
Total time: 40 minutes prep, 30 minutes baking
Ease: Intermediate
Unusual ingredients: cream of tartar, powdered sugar, peanut butter, chocolate

We celebrated the 4th of July over a few days, with all surrounding towns setting of fireworks on various nights. On the night of the 4th, we joined our neighbors out on the front lawn to watch our town’s fireworks go off nearby.

I vaguely recalled previous peanut butter creations going over well with our neighbors, so I decided to give these a shot. It took much longer than expected; my Kitchenaid’s whisk attachment doesn’t reach the bottom of the bowl, so the measly three egg whites didn’t stand a chance to get whipped on their own. (more…)
