Nutella Milano Cookies

I had a craving for a simple but beautiful cookie and scoured my favorites on for inspiration. I came across this really straightforward recipe for homemade Milan cookies but didn’t have a few of the ingredients (namely lemon extract and heavy cream).

I decided to substitute the lemon extract with orange extract and skip over making my own filling entirely and instead use one of my favorite flavors of all time, Nutella. The result tastes like the most delicious fortune cookie you’ve ever had with filling!

The main tip I have is to make sure your powdered sugar and butter have completely dissolved into one another. I had a few lumps of powdered sugar left in the batter and, though tasty, they make the cookies look a little lumpy. Be patient as you’re piping them onto your parchment and make sure they’re spaced at least two inches apart! (more…)

Old-Fashioned Vanilla Layer Cake

For the last night of my Wilton decorating class, we had to bring in a cake pre-frosted and ready to decorate. I chose this seemingly-simple layer cake, originally seen in this gorgeous variation.

I had a bit of a tough time. For one, of my three layers, only two came out. (One was way too thin.) Two, I forgot to color the layers in gradually darker shades of red, like in that gorgeous variation. But it wouldn’t have mattered; I didn’t make enough layers for impact, either. None of these things were the original recipe’s fault (the recipe on the gorgeous variation’s website doesn’t give instructions for the coloring, though), and the cake ended up tasting very good.

I like that it’s called an ‘old-fashioned’ cake; it definitely doesn’t have that out-of-a-box texture that most party cakes of today have. It also held up very well to my frosting and barely created any crumbs at all. (more…)

Gluten free chocolate fudge cookies

My dear friend Kelly and her wife Natalie are some of our favorite people on the planet. Kelly has Celiac, and when we got together with them to visit the Mystic Aquarium a few weeks ago, I was so excited to dive in to my saved gluten-free recipes and try something new!

I was so surprised that King Arthur Flour actually had a recipe that not only didn’t use flour, but didn’t use any King Arthur products! Incredible, and impressive… and DELICIOUS.

These are super easy and super fudgy. I think they could have used a little more salt on the top, or something else to give them a little kick – but you would never have guessed these chocolate cookies were GF! Highly recommend you try these, even if you’re not following a gluten free diet.
