Nutella Milano Cookies

I had a craving for a simple but beautiful cookie and scoured my favorites on for inspiration. I came across this really straightforward recipe for homemade Milan cookies but didn’t have a few of the ingredients (namely lemon extract and heavy cream).

I decided to substitute the lemon extract with orange extract and skip over making my own filling entirely and instead use one of my favorite flavors of all time, Nutella. The result tastes like the most delicious fortune cookie you’ve ever had with filling!

The main tip I have is to make sure your powdered sugar and butter have completely dissolved into one another. I had a few lumps of powdered sugar left in the batter and, though tasty, they make the cookies look a little lumpy. Be patient as you’re piping them onto your parchment and make sure they’re spaced at least two inches apart! (more…)

Mint Chocolate Chip Cake

Thank goodness I have a mother-in-law with good taste in birthday cakes.

This past week we traveled to my in-laws to celebrate her birthday. Brad gave me some tips on what she might like for her cake – I was stoked to create something minty and chocolatey for her. This easily ties for first place with another cake I made when visiting them (chai cake with honey ginger cream). It’s super chocolatey and the mint is just perfect; it really reminds your taste buds of ice cream!

Chocolate Malted & Toasted-Marshmallow Layer Cake

Unusual ingredients: malted milk powder, whipping cream, marshmallows, marshmallow fluff, unsweetened cocoa powder, coffee

Marshmallows. Malt. Heavenly moist chocolate cake. Thus was my Saturday.

I knew this was going to be a time investment. Layer cakes aren’t as simple as bake and frost; this cake also had more layers than the typical layer cake I’m used to. The recipe originally was for six layers of cake – mine turned out to be only four, and it was perfect. I made no adjustments to the recipe.

The cakes themselves were perfect. I used 8″ pans and everything was pretty level to begin with. Torting them was really easy with my cake leveler, and the leftovers from leveling made a great snack. The hardest part of the whole endeavor was making the marshmallow filling. (more…)
