Chocolate Malted & Toasted-Marshmallow Layer Cake

Recipe: Sweetapolita's Campfire Delight

Unusual ingredients: malted milk powder, whipping cream, marshmallows, marshmallow fluff, unsweetened cocoa powder, coffee

Marshmallows. Malt. Heavenly moist chocolate cake. Thus was my Saturday.

I knew this was going to be a time investment. Layer cakes aren’t as simple as bake and frost; this cake also had more layers than the typical layer cake I’m used to. The recipe originally was for six layers of cake – mine turned out to be only four, and it was perfect. I made no adjustments to the recipe.

The cakes themselves were perfect. I used 8″ pans and everything was pretty level to begin with. Torting them was really easy with my cake leveler, and the leftovers from leveling made a great snack. The hardest part of the whole endeavor was making the marshmallow filling. (more…)

Moist Chocolate Layer Cake

Recipe: Foodess' Moist Chocolate Cake

Unusual ingredients: buttermilk, coffee, cocoa

I was having a bad week. I knew that, on the weekend, I was going to want something to totally indulge in. Enter the easiest, most delicious chocolate cake I’ve ever eaten that wasn’t from a box.

I knew I wanted to make something chocolatey, I knew I wanted it to be super easy, and I also knew I wanted it to be able to hold up a few days til I was able to devour it. I saw this recipe come through on and I made it that night!

You’ll notice I had a different color frosting in between than on top and on the sides; I had some frosting left over from making the Hostess Cake Pops and used the last half a can in between the layers. These are the best kind of leftovers!
