Thank goodness I have a mother-in-law with good taste in birthday cakes.

This past week we traveled to my in-laws to celebrate her birthday. Brad gave me some tips on what she might like for her cake – I was stoked to create something minty and chocolatey for her. This easily ties for first place with another cake I made when visiting them (chai cake with honey ginger cream). It’s super chocolatey and the mint is just perfect; it really reminds your taste buds of ice cream!

Chocolate Pear Cake

Recipe: Cake Crumbs and Cooking's Chocolate Pear Cake

I’m lucky to have some fantastic friends who live in my town, and after I baked up this easy little chocolate cake, I brought it over to share with them. The feedback was exactly what I was thinking: more pears!

This recipe only calls for one pear on top. Honestly, it could have easily had a layer of pears in between the batter, or another pear on the top of the cake. The cake itself is fine; it is on the dense side, almost like a brownie (but not quite). The cake is a little boring; no particular flavors other than the mellow chocolate. It really needs the pears to spice it up, and I’m definitely going to use more of them next time.

I also skipped the semolina part of it and used what the original-original recipe had said – 50g self-raising flour. I used a scale to weigh everything, so I don’t have the conversions written down. But there are so few ingredients, it didn’t take long to prep at all, even with the conversions!

Green tea and lavender custom chocolate chip cookies

Recipe: Honest Vanilla's Chewy Green Tea Chip Cookies

Unusual ingredients: vanilla pod, strong-brewed green tea, caster sugar

Curious as to how to use those custom-flavored chocolate chips? These cookies are perfect.

They’re easy to make and are the perfect accent to your custom chocolate chips. This recipe called for strong-brewed green tea to replace the water in the batter, but you can replace that with any kind of flavored liquid. Just imagine all the different extracts, teas, and other rich flavors you could incorporate!

The recipe also calls for a vanilla pod. I use vanilla paste (it’s cheaper than getting individual pods) and it worked great for me. These cookies are very buttery and chewy – and they really leave room to highlight your custom chocolate chips. (more…)
