Self-frosting peanut butter and chocolate vegan cupcakes

Recipe: Wing It Vegan's Self-Frosting Peanut Butter Cupcakes
Total time: 45 minutes
Ease: easy
Unusual ingredients: soymilk, apple cider vinegar, flax seeds, peanut butter, applesauce

Me: “Honey, I think I’m going to bake something… what would you like?”
Brad: “Um, something with chocolate? Oh wait, I think we’re out of eggs!”
Me: “I have just the thing!”

I’d been saving this recipe for a rainy day when I was sort of out of typical baking ingredients… like eggs. Or milk. Now, I also didn’t have flax seeds, but I did have both the vinegar and the unsweetened applesauce, so I went for it!

These were supposed to be “self-frosting” cupcakes. And they sort of were. But mine certainly didn’t come out as pretty as the original post. That being said, they were absolutely delicious. (more…)

Vegan Coconut Lime and Cookies ‘n’ Creme cupcakes

Recipe: 1/2 batch Cookies 'n' Creme and 1/2 batch Coconut Lime cupcakes from Isa Chandra Moskowitz & Terry Hope Romero's 'Vegan Cupcakes Take Over the World'

I bake these cupcakes when I want to impress my non-vegan friends. I generally ‘forget’ to mention that they are egg-, dairy-, and cholesterol-free until said friends are licking their plates clean.

These recipes are very different, and it was probably more difficult to make the batter side-by-side than it would have been to just make two full batches. So when in doubt, make 2 dozen instead of one! (more…)

Root Beer and Cherry Cupcakes

Recipe: Cupcake Project's Cherry Coke Cupcakes with Cola Frosting

Unusual ingredients: root beer extract, maraschino cherries

RootReady to try something super weird? Attempt to incorporate carbonated liquids into cupcake batter.

These were not my most successful cupcakes, however pretty they turned out! I didn’t have any cola extract or cola in a can – so instead, I used root beer extract and some ginger ale. I prefer root beer to cola anyway, so this definitely worked out for me!

This batter is very strange – it looks relatively bubbly as your pour it into your cupcake mold, and it doesn’t really rise or puff like typical cupcakes do.

I added half the amount of cherries that were recommended to incorporate into the cupcakes, since I thought they might add too strange of a texture/layer, and I wanted the cupcakes to be more root beer-y than cherry. I think this ended up being a smart decision: it left enough cherries to top off the cupcake, and added a nice surprise to the inside of the cupcake, but still left it more of a “soda” cupcake than anything else.
