Bacon Chocolate-Chip Cookies

Recipe: Mouth From the South's Brown Butter, Bacon and Chocolate Chip Cookies

I thought the Nutella cupcakes would be the fastest things to be consumed at my office. I was wrong: nothing could top the hubbub inspired by these bacon chocolate chip cookies.

Yes, that’s real bacon – and yes, it was cooked beforehand! And no, they don’t really taste of bacon – but there’s definitely an extra salty kick that puts these cookies in to delicious overdrive.

I was intimidated by this recipe primarily because I’d never browned butter before. Actually, I still haven’t browned butter – my husband kindly took the stress out of this baked good for me by making the bacon and browning the butter. I recommend that you make the bacon on the crispy side – we thought we’d made them crispy enough, but the cookies would have been even better with a little more crunch to them.

Brad did an awesome job of browning the butter, above. It wasn’t nearly as scary as I thought it would be!

We stayed just under a full cup of bacon, and I think this turned out to be the right amount. I was careful to just fold in the chocolate chips and the bacon, and I think this really helped keep a good consistency with the batter. The batter, by the way, tastes like caramel – it’s very hard to resist eating all of it straight!

These were a total success. Perfect consistency, unusual but awesome taste, and a total hit with my coworkers.

Final tips:

  • make the bacon even crispier than you think it should be
  • don’t overdo it on the bacon – a little under a cup is fine
  • if you only have chocolate chips, that’s terrific. I skipped the grating/chopping!

      Loving your blog Lara! I just made a choc chip recipe from Cooks Illustrated that claims melting the butter makes the cookies more chewy (Something to do with dissolving the sugar crystals before baking). It’s a totally different cookie – like you said, more caramel/butterscotch. But that’s a good thing in my book. Delish! Can’t wait to try this recipe!

    ^^ Ditto Risa- the site’s flat cookies didn’t look nearly as tempting as your thicker ones. I’m about to try this tonight- can you think of what else you did differently? Also- I’m subbing the choc. chips for chocolate peanut butter chips. mmmmmmmmmmmm
