Spinach and Kale Smoothie Starter

smoothie-starter-squareWhat do you get for the person who loves making smoothies? Plenty of kale and spinach!

Since I have Crohn’s, I can’t eat any leafy greens so I rarely pick them up at my local farmer’s market. But these bunches of kale and spinach were too beautiful to pass up! I had seen this recipe for green smoothie cubes and decided to try it. The result is a “smoothie starter” or “smoothie base” made out of kale and spinach that allows you to use greens anytime you want to make a smoothie, whether or not you have these veggies fresh on hand, without losing any nutritional value! All you need is a bunch of kale, a bunch of spinach, and a few cups of water.

Earl Grey Lemonade

Recipe: Un dejeuner de soleil's limonata alla lavanda e rosmarino
Total time: half hour to steep tea, 5 minutes to juice lemons
Ease: easy
Unusual ingredients: lemons, earl grey

Oh my goodness gracious. I have found the best drink I have ever tasted. It combines my favorite tea with my favorite summer drink; if you like Arnold Palmers, you’ll like this lemonade made with Earl Grey tea. (Kelly Prizel, you need to try this immediately!)

I was inspired to make the original recipe using lavender and rosemary, but on this hot summer day, neither were to be found in our cupboard. We did, however, still have a ton of loose Earl Grey tea. We decided to give this a shot.

The resulting drink has the lemon tang with a soothing floral citrus flavor, and a hint of bergamot. If you like sweeter lemonades, then definitely add more sugar – this recipe is for a very tart, fresh lemonade. The tea isn’t overwhelming; it just adds a really subtle and new flavor that’s incredibly refreshing. (more…)

Self-frosting peanut butter and chocolate vegan cupcakes

Recipe: Wing It Vegan's Self-Frosting Peanut Butter Cupcakes
Total time: 45 minutes
Ease: easy
Unusual ingredients: soymilk, apple cider vinegar, flax seeds, peanut butter, applesauce

Me: “Honey, I think I’m going to bake something… what would you like?”
Brad: “Um, something with chocolate? Oh wait, I think we’re out of eggs!”
Me: “I have just the thing!”

I’d been saving this recipe for a rainy day when I was sort of out of typical baking ingredients… like eggs. Or milk. Now, I also didn’t have flax seeds, but I did have both the vinegar and the unsweetened applesauce, so I went for it!

These were supposed to be “self-frosting” cupcakes. And they sort of were. But mine certainly didn’t come out as pretty as the original post. That being said, they were absolutely delicious. (more…)
