Yes, the lemon is delicious. Yes, the cookies are the perfect texture. Yes, they go perfectly with coffee, tea, or any other breakfast drink.
But it’s the dark chocolate with espresso that can’t be beat.
If you work in a caffeine-addicted workplace like mine, take note: coworkers will adore you if you include even the hint of that coffee taste. Sure, the espresso technically has no power in such small quantities. But just the idea of it will get them going!
I opted to use already-ground almonds and mix in the sugar. I also didn’t bother with the pastry tip to create the cookies – a spoon worked just fine for me!
