Recipe: Martha Stewart's Lemon-Espresso Bites
Total time: 1 hour
Ease: easy
Unusual ingredients: ground almonds, egg whites, lemon juice, instant espresso powder, heavy cream

It was with these cookies that I realized the secret to my coworkers’ hearts: espresso.

Yes, the lemon is delicious. Yes, the cookies are the perfect texture. Yes, they go perfectly with coffee, tea, or any other breakfast drink.

But it’s the dark chocolate with espresso that can’t be beat.

If you work in a caffeine-addicted workplace like mine, take note: coworkers will adore you if you include even the hint of that coffee taste. Sure, the espresso technically has no power in such small quantities. But just the idea of it will get them going!

I opted to use already-ground almonds and mix in the sugar. I also didn’t bother with the pastry tip to create the cookies – a spoon worked just fine for me!

Final tips:

  • a chewier cookie is harder to get up from the parchment; let it bake a little longer if you have trouble picking them up
  • go overboard on the filling. Your diners will appreciate it later.

Hey! Naturally gluten-free! I was smitten by them this afternoon when they went up, and finally clicked over to see how much work it’d be to adapt and was pleasantly surprised :) Hoping I’ll make them soon, now…

  4. Saw these on Foodgawker and just wanted to say they look beautiful! Yum.
