You may have noticed that I have a thing for chocolate. When I saw this recipe come up on Martha’s cookie of the day, I knew I had to try it out for my first attendance to the local ladies book club! I was making a bunch of cookies at the same time; here’s the two dry mixes next to each other. Can you guess what the other cookies were? That’s for another post!


I am just in love with my cookie scooper. It was really needed for these cookies, since they had to come out in very even circles to be stacked as sandwiches. I ended up baking them for a little longer than the recipe called for, but they were still nice and soft!

I’ll be honest: I didn’t like the filling when I tasted it by itself. I thought it was too malt-y. I was also very generous as I spread it on the cookies; I always end up making fewer cookies than the recipe says there’ll be! When it all came together, the cookie sandwiches were PERFECT – the salty and dark chocolate cookie is the ideal balance for the malt filling!

Final tips
- create evenly-sized (and evenly-spaced) cookies on the baking sheet. It’ll help you when you’re creating the sandwiches!
- don’t be shy with the filling – just stack it towards the center so it doesn’t bubble too much out the sides.
